Tasty Asian side – Garlic eggplant

This is the easiest tastiest side ever – and it takes about 10 minutes to make from start to finish. I remember eating something similar to this at a local Chinese restaurant and I decided to give it my own take at home.

What You Need

2 or 3 Chinese eggplants (thinly sliced)

A couple tablespoons of vegetable Oil

A couple tablespoons of teriyaki sauce

Fresh chopped garlic or 2-3 teaspoons of pre-chopped garlic (you can buy this readymade in a jar – this is my option

Slice your eggplant.

In a medium fry pan or wok or skillet, heat oil.

Add garlic. Allow garlic to cook for about a minute.

Drop in your sliced eggplant. Let cook for another additional minute.

Mix around. You will notice that the eggplant will start to soften and absorb the oil. Now pour in the teriyaki sauce.

Stir. Cover the pan with a lid for a couple minutes. Remove lid. Continue to stir until eggplant is completely soft and golden brown.

It’s a great side dish – Mmmmmmmmmmm!
