Mom’s stuffed peppers

I absolutely love stuffed peppers! So yum. My mom, who is a wonderful cook, makes the absolute best stuffed peppers. This is my attempt and they turned out pretty well.

What you need:
-6 large bell peppers, you pick the colour
-1/2 pound of lean ground beef
-1 medium chopped onion
-1 cup of tomato sauce
-salt, pepper and oregano to taste
-a splash of vegetable oil
-Foolproof Rice

What you do:
-Cook your rice – see Foolproof rice
While your rice is cooking, cut the tops off your peppers and set them aside in glass Pyrex dish.

Heat a splash of vegetable oil in a medium saucepan, turn up to medium. Add your chopped onion. Let them sweat a little bit. Add your ground beef. Season with salt and pepper. Cook until the ground beef has browned. Set aside when cooked.

Combine your rice, cooked ground beef and onions in the same saucepan. Add the tomato sauce and mix well. Season with oregano and pinch more of salt and pepper.

Let the mixture cool.

Use a spoon to fill each of the stuffed peppers. Replace peppers tops. Repeat. Arrange so that the peppers don’t fall over.

Place in the oven at 350° for about 20 minutes. Make sure the peppers are soft. If you want, you can put on broil for a couple minutes so that the peppers blacken.

Voila – enjoy. You may have extra rice left over you can eat this as a side dish.
